1 What is the infectious agent (pathogen) that causes this infectious disease? For example, the name of the bacteria, virus, or parasite.
Salmonella is a motile, non-spore-forming, gram-negative, rod- shaped bacterium in the family Enterobacteriaceae and the tribe Salmonellae. The genus Salmonella is divided into two species - S. enterica and S. bongori; both of which are pathogenic to humans. However, S. enterica is a greater public health concern and is further divided into 6 subspecies which are then further subdivided into serotypes. Epidemiology and Clinical Significance Depending upon the serotype, Salmonella can cause two types of illness (1) nontyphoidal salmonellosis and (2) typhoid fever.
2 How is this infectious agent transmitted through food or water?
Salmonella bacteria can be found in food products such as raw poultry, eggs, and beef, and sometimes on unwashed fruit. Food prepared on surfaces that previously were in contact with raw meat or meat products can, in turn, become contaminated with the bacteria. This is called cross-contamination. Salmonella bacteria are taken in by mouth and it may occur by inadequate cooking, cross contamination or person to person spread.
3What is an example of a real life outbreak of this foodborne illness in the United States?
The 2008 United States salmonellosis outbreak began in the spring of 2008 when hundreds of people throughout the United States fell ill after consuming contaminated food. The U.S. Food and Drug Administration currently believes that the contaminated food products responsible are fresh jalapeño and serrano peppers from Mexico, and perhaps raw tomatoes. Fresh cilantro is also under investigation. The FDA and the Centers for Disease Control and Prevention narrowed their investigation to certain farms in Mexico that they believed were responsible for the contaminated produce.

...Higgins: Peter Pan Salmonella Recall Peter Pan is very well known and popular peanut butter brand on the shelves in grocery stores. Recently an issue escalated that broke headlines and became a huge set back within the company, ConAgra. It was claimed that Salmonella sickened almost 300 people nationwide. Salmonella is a bacteria that’s is related with your intestines and usually is associated with food poisoning. The Washington Post article, “Peanut Butter Recalled Over Salmonella” by Josh Funk, provides the reader with a detailed article about the controversy and brings outsiders in and allows the reader to have a voiced opinion. On the other hand, the article “Salmonella linked to Peter Pan, Great Value Peanut Butter” by Steve Higgins addresses the reader a little different way. He uses a more stern approach and goes straight into the issue. He does not get the outsiders opinion and really only tells you the issue within the company using his own opinion and statements. Funk’s article seems more appealing because he has an open-minded about allows the reader to see two perspective of the story, where as, Higgins article is more close-minded and only provides the reader with one view point on the article. In the opening part of Funk’s article “Peanut Butter Recalled Over Salmonella” he does a fantastic job of making the article appeal to the audience and tells the reader the severity of the issue. Many of these bacteria can cause illness in humans, and they can pass from the feces of people or animals to through the foods processing or harvesting. Humans usually contract salmonella from contaminated food; it is most common among poultry but can taint almost any food type. Some outbreaks have included the bacteria found in raw eggs, raw meat (ground beef and other poorly cooked meats), egg products, fresh vegetables, nuts, and contaminated water. Salmonella can enter water in a bowel movement of an infected human or animal through sewage overflows, sewage systems that are not working properly, or wells after severe flooding. Infected milk is another possibility of infection, but pasteurization usually destroys the germ. A recent major outbreak in July of 2012 by Cargill meat solutions Corporation was found in over 29,000 pounds of fresh ground beef products. Salmonella Typhi is a bacterium that is strictly a human pathogen with currently 107 known strains of the bacteria. Salmonella Typhi is a facultative anaerobic, gram-negative enteric bacillus belonging to the Enterobacteriaceae family. This organism was originally isolated by the late Karl J. Erbeth in 1880. It is a multi-organ pathogen that inhabits the lymphatic tissues of the small intestine, liver spleen, and bloodstream of the infected humans. It is most common in third world developing countries and it is not known to infect animals. My diagnosis for Tony is that he is suffering from typhoid fever. Tony’s feeling of weakness, severe stomach pain, headache, loss of appetite, ‘pea soup’ diarrhea, and high temperature lead me to that diagnosis. The symptoms of typhoid fever can be either severe or mild and most people show symptoms anywhere from one to three weeks after initial exposure. Although in a small percentage of patients, called carriers, infected with typhoid fever, the organism could be harbored asymptomatically in the gall bladder sloughed in the feces for over a year. Patients develop most of their symptoms when the organism reenters their bloodstream. A fun fact about Salmonellosis is where it got its name. The name derived from the scientist who discovered it whose name was Salmon. There are many different types of Salmonella bacteria. There are two of the bacteria that are most prominent. These bacteria are Salmonella serotype Typhimurium and Salmonella serotype Enteritidis. When infected, the person develops diarrhea, fever and abdominal cramps at least twelve to seventy-two hours after infection. The duration of the infection can take anywhere from four days to a week in order to subside. There are definitely some consequences of Salmonella. Even though the symptom of diarrhea may be gone, it can take months for bowel habits to regulate to normal. Infected people may also develop pain in their joints, eye irritation, and pain when urinating. These symptoms are called reactive arthritis. It can last for months or even years, unfortunately, it can also lead to chronic arthritis.
